Les Cocoettes Paris

Les Cocottes by Christian Constant - When we couldn't get a reservation at Spring, Mike discovered Les Cocottes.  We took a stroll over to the restaurant and as predicted, there was quite a line to get served.  The décor in the restaurant was charming - a muted electric green color with modern finishes.  The wait ended up being faster than we expected and we were seated at the bar next to the kitchen.  Our seats were perfect because we could peer into the kitchen through a small open window.  The kitchen was small and clean and the prep cooks, chefs, and expeditiers were all quite young, dancing around each other in that professional chef way.  We ordered a magnificent salad with warmed bacon.  It was a mouthful of salty sweetness and various textures; very rich and could be considered a meal.  I ordered the lamb with couscous.  The lamb arrived in its own cocoette and the couscous also arrived solo in a cocoette.  The lamb was cooked perfectly and fell apart from the fat easily.  It reminded me of slow roasted pot roast, but only so much better.  The flavor was juicy and rich with a variety of seasonings that I couldnt' identify.  The couscous was cooked perfectly as well, but even though it had current berries cooked with it, it lacked flavor.  Because of this, I emptied the couscous cocoette into the lamb to absorb all the flavorful juicies.  Outstanding!  What a tantatlizing dish full of flavor and texture!
